18 Jan Mermaid Edamame Hummus
I love making chickpea hummus! However, I am so thrilled by this recipe and the added nutritional value Edamame brings to the recipe, I don’t think I’ll ever go back to chickpeas! I had never dreamt of this fabulous concoction called Edamame hummus until one fateful Christmas Eve in Laguardua airport! My stomach rumbled as I passed through security with little Shimmer on our way to celebrate Christmas in Michigan! I cringed as I walked over to the food court. Dreading the poor selection of unhealthy food and sparse- bordering on nonexistent vegan options! However, to my wonderful surprise, the Delta terminal was stocked with tons of healthy options! And vegan too! I found a vegetable sushi roll and of all things…..Edamame hummus! The airport is seriously he last place I’d ever think I’d find culinary inspiration….but there it was! I couldn’t wait to experiment with online recipes and start making Edamame hummus! So this is the recipe I came up with after a few taste tests and experiments!
1 1/2 cups frozen blanched shelled edamame (green soybeans)
4 teaspoons extravirgin olive oil, divided
1 teaspoon salt
1/2 teaspoon ground cumin
1/4 teaspoon ground coriander
2 garlic cloves, peeled
1/2 cup fresh flat-leaf parsley leaves
3 tablespoons tahini (sesame-seed paste)
3 tablespoons water
3 tablespoons fresh lemon juice
1/2 teaspoon paprika
You can find packages of frozen edamame in most health food shops or nicer grocery stores, Prepare edamame according to package directions. Place 1 tablespoon oil, salt, cumin, coriander, and garlic in a food processor, and pulse 2 to 3 times or until coarsely chopped. Add the edamame, parsley, tahini, water, and juice; process 1 minute or until smooth. You might want to add a little more water if it seems too thick! Spoon the hummus into a serving bowl. Drizzle with 1 teaspoon oil, and sprinkle with paprika. This is a base recipe which I like to spice up with red pepper! I am a red pepper fiend! I put tons of it on everything!!! So feel free to spice away to suit your taste!
